  • 1 tbsp olive oil
  • 1 small red bell pepper, sliced
  • 1 small onion, sliced

  • Salt & pepper, to taste
  • 6 large flour tortillas or egg roll wrappers
  • 1 cup shredded cheddar cheese (or provolone)
  • ¼ cup cream cheese (optional, for extra creaminess)
  • 1 tbsp chopped parsley (for garnish)
  • Paprika for dusting (optional)

Instructions

  1. Heat a skillet over medium-high heat. Add olive oil, then the steak. Season with garlic powder, smoked paprika, salt, and pepper. Sear for 2–3 minutes per side until just browned. Don’t overcook—keep it juicy.

  2. Add onions and bell peppers to the skillet. Sauté until soft, about 4 minutes. Stir in cream cheese if using, and a splash of Worcestershire sauce for depth.

  3. Lay a wrapper flat. Spoon in 2–3 tablespoons of the steak mixture and top with shredded cheddar cheese. Roll burrito-style, sealing the edge with water.

  4. To cook:
    Pan-fry – Heat 2 tbsp oil in a pan. Fry rolls for 2–3 minutes per side until golden.
