Ingredients
- 3 medium ripe bananas
- 2 large eggs
- 1 cup full-fat cottage cheese
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 2 cups blanched almond flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 cup optional mix-ins (chocolate chips, walnuts, pecans, or blueberries)
- Non-stick spray (for pan)
Instructions
Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and lightly spray with non-stick spray.
In a large mixing bowl, mash the bananas until mostly smooth. Add eggs, cottage cheese, maple syrup, and vanilla extract. Whisk until combined.
Add almond flour, baking soda, and cinnamon. Fold the ingredients together gently with a spatula until no dry streaks remain.
Fold in any optional mix-ins like chocolate chips or nuts.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, checking at 30 minutes. Tent with foil if the top browns too quickly.
Insert a toothpick to check doneness—it should come out with a few moist crumbs.
Let the bread cool in the pan for 15–20 minutes, then lift it out with the parchment handles and cool completely on a wire rack.
